Blocking dates for different products

As I am in the floral industry. The prices of flowers are expensive during the peak season like valentines day 14 Feb.
However, as I have other products, I would like to block out the dates for regular priced items.
So would be great if there is a way to select dates or block them for different products

It would be highly beneficial if this upcoming feature could incorporate the ability to block specific days of the week and incorporate a lead time.
To illustrate, imagine we want to launch a weekend special for product A, which is available only on Saturdays and Sundays, and has a lead time of 3 days.
In this scenario, when Friday arrives, customers should no longer be able to place orders for that current week. Instead, the next available pickup/delivery day should automatically be set for the following Saturday.
